Finally! The bánh mì recipe is a follow up to the recipe I last posted, the Vietnamese pork belly recipe more than two years ago in restaurants in hanoi (!!). I hope the next recipe here doesn't take another two years :).

Originally designed as on-the-go food, but compact, portable and even though I sell it well here it really is an affordable and humble creation of any sandwich enthusiast to try in restaurant hanoi.

The Vietnamese sandwich was influenced by French colonialism in Vietnam with French baguettes (similar to Vietnamese coffee), but the Vietnamese made this sandwich on their own.
What is Bánh Mì?

The problem with a good baguette for bánh mì is that you can't buy it anywhere but from a bakery in Vietnam. Avoid sourdough, anything too dense and go for a crispy crust. Vietnamese baguette is usually quite windy with a crispy crust. Some markets have small French bread crumbs that will work for them.

While made-to-order sandwich shops can be tedious and convenient, making them at home can be even better when you customize them to your own taste.

And to be frank, no sandwich shop does the pickle I like - it's usually too noisy and watery.
